Fluffy Omelette with cheese sauce

Easy. Tasty. Fast.


Many times in the weekends I just wake up, want something easy to eat but still want to feel that fancy breakfast. Check out this quick recipe that you can easily make.

Ingredients for 2 servings
  • 3 eggs

  • 1 tomato

  • 100 gr of cow cheese

  • 1 small yogurt

  • 2 tsp of olive oil

  • salt

  • pepper

  • oregano

Timing

Preparation time: 10 min

Cooking time: 5 min

Total time: 15 min


Preparation
  1. Separate the white egg from the yolk.

  2. Mix the white egg with a bit of salt until it becomes a foam.

  3. Add the yolk and mix all together until everything is in piece.

  4. Put the pan on the stove and let it heat for a little while with 1 tea spoon of olive oil.

  5. After the pan is heated just put the egg mix and let it cook. When it`s ready on one part just flip it like a pancake and let it cook on the other side as well.

  6. Meanwhile, take the tomato and cut it in 2. Each half will be used for one dish. Then cut the half in smaller pieces at your own size taste.

  7. After you finish with the tomato take the cow cheese and shred-it with a fork.

  8. When all the cheese is smashed add the yogurt, 1 tea spoon of olive oil and season everything with salt and a bit of pepper and oregano. Mix everything up and don`t forget to taste. Try not to put too much spices from the begging. The cow cheese already has some salt and it can be quite salty if you don`t try it first.

  9. When the omelette is ready just bent it in 2 and place it on the plate. Add the cheese sauce and then the half tomato and there you have your Fluffy fancy omelette.



PS. After you cook and taste just remember for the next time that fulfillment of eating something great and use that feeling when you start cooking. It will give you that extra punch of wanting to cook more when the time allows.
